Vegetarian Korean BBQ Chaap Ramen Bowl with 20 Grams of Protein

 

 

Ingredients - Serves: 1

  • Korean BBQ chaap – 4 pieces
  • Ramen noodles (whole wheat if possible) – 80 g cooked
  • Bok choy/spinach – 30 g
  • Mushroom – 30 g, sliced
  • Spring onion – 1 stalk


Broth:

  • Veg stock – 250 ml
  • Soy sauce – 1 tsp
  • Gochugaru (Korean chili flakes) or chili powder – ½ tsp
  • Garlic – 2 cloves, minced
  • Ginger – 1 small piece
  • Rice vinegar – ½ tsp
  • Sesame oil – ¼ tsp

 

Method:

Step 1: Take all ingredients for the broth and let them simmer in water for 5 minutes. 

Step 2: Add mushrooms and greens, to simmer for another 3 minutes.

Step 3: Cook the noodles and place in a bowl.

Step 4: Grill or heat the chape in the glae until it is charred slightly. 

Step 5: Finally, bring the Ramen together by combining the noodles, borth ,chaap, and spring onion garnish.
