This is a relatively easy dish that doesn’t require many complicated ingredients or preparation. The Vada Pav requires three essential components: the Sweet Potato Tikki, the Green Chutney, and finally, the Dry Garlic Chutney Powder. And lest we forget, the Pav.


Ingredients Required for Assembly:

  • 1 Pav Bun
  • 4 Sweet Potato Tikkis (100g)
  • 6-8 Onion Rings
  • 2 tsp Green Chutney (Recipe Below)
  • 1 tsp Dry Garlic Chutney Powder (Recipe Below, Optional)
  • 1 tsp Oil 

 

Ingredients for Green Chutney:

  • 1 cup Corriander Leaves
  • ½ cup Mint Leaves
  • 2 Green Chillies
  • 1-inch Ginger
  • 1 tsp Lemon Juice
  • ½ tsp Roasted Cumin Powder
  • Salt to Taste
  • 2-3 tbsp water

 

Ingredients for Dry Garlic Chutney Powder:

  • 2 tbsp Dry Coconut (Grated)
  • 6 garlic Cloves (Dry Roasted)
  • 4-5 Dry Chillies 
  • Salt to Taste

Method:


Step 1: To make one portion of Green Chutney for this recipe, simply blend all the aforementioned ingredients into a fine, smooth paste. 


Step 2: Next up, we prepare the Garlic Chutney Powder, which adds quite a bit of an edge to the final product. For the powder, dry roast the already-grated coconut, garlic, chillies, and salt. 


Step 3: To hold everything together, we need the Pav.  For this, simply toast the Pav buns lightly with just a hint of oil. Toast until they’re lightly crisp.


Step 4: After the buns are toasted, simply spread the Green Chutney inside the Pav, forming the base layer of the dish.


Step 5: Place 4 Protein Pantry Sweet Potato Tikkis in each pav, add some onion rings for a little extra crunch and flavour. Finally, top this off with a nice dash of Garlic Chutney Powder and serve hot.
